Portobello Burgers

This is a great summer meal. It's lite & tasty & doesn't require too much time in the kitchen.

INGREDIENTS
4 lrg portobello mushrooms, stems removed
3 TBLS balsamic vinegar
3 TBLS olive oil
1 TBLS Dijon mustard
2 cloves garlic, minced
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
3 TBLS goat cheese
1 TBLS mayo
1/2 tsp cracked pepper
4 Kaiser rolls
2 cups baby arugula
1 small red onion, sliced

Preheat oven to 425 degrees. Can also be placed on a grill.
In a lrg bowl combine vinegar, oil, mustard, garlic, oregano, salt & 1/4 tsp pepper.
Add mushrooms & coat both sides. Set aside for 15 minutes to marinate.
In small bowl combine cheese, mayo & remaining pepper.
Mix until creamy & smooth.
Place mushrooms on ungreased baking sheet.
Cook each side for 7 minutes.
Spread the top of each roll with cheese mixture.
Add arugula & onion to bottom half & place mushroom on top.
