My weekend in R.I. went well. There were not any major catastrophes & everyone got along!! The wedding itself was beautiful. My cousin Lea(the bride) looked gorgeous. A four course dinner was served & of course wedding cake, but my favorite thing was the chocolate fountain! It was a buffet that had everything from fruit to marshmallows. You put everything on skewers & put it under the cascading chocolate. UM, UM, GOOD!! Yes, I cheated big time on my cleanse!!
Some other highlights were Becky's maid of honor speech - so touching; my brother Stephen doing his Russian dance to Saturday Night Fever; cousins Matt & Becky's dance off to Ice,Ice Baby & Tom blowing them both away with his splits and break dancing(Kyle even got in on the act by spinning on his back); and Lea and my Uncle Donald doing the traditional father daughter dance had us all in tears.
I want send out some thank you's. To Erin, who told me that she loves my site. Thanks for the support! And an extra big THANKS to my cousin Becky. Tom's son Kyle was kind of mopey at the start of the reception. I think it was a combination of him not feeling well & boredom. Becky (a babe), came & ask him to dance. She really put a smile on his face & he was fine for the rest of the night!
So, all & all it went well. Kyle thinks my family's a little crazy, but harmless. I'm hoping to get some pictures up on the photo section by the end of the week, so check back.
Tom's son Kyle, is coming to NYC this weekend. We are taking him to R.I. with us for my cousin's wedding. This is his first Big Italian Wedding & the first time meeting my family. I hope that everyone is well behaved! Tonight I'm getting my outfit ready for the wedding. I'm wearing a dress from the 70's that was my grandmother's. I'm altering it to fit me & dyeing some shoes in tea to match the dress.
My food cleanse is going o.k. Yesterday, I really needed some sugar so I cheated, which is very bad. Today I really want pasta, which I can't have. Everywhere that I went today I kept smelling pasta. I even thought that I smelled it at the dry cleaners!! I have 2&1/2 more weeks of not eating anything with any flavor in it. I hope I can make it!!
First the bad news. I went to a doctor last week and he thinks I have a food allergy, so, he put me on a cleanse. For the next month I can't eat wheat, sugar, diary, anything smoked, cured, or pickled. Anything that contains mold or yeast or anything processed. Basically, I can only eat steamed or grilled veggies & steamed or grilled chicken and fish. I have to go to my cousin's wedding in R.I. next weekend & I'm not going to be able to eat or drink anything! THIS SUCKS!!
The good news is that I will continue to test family recipes for Tom & anyone else that can actually eat them. I will watch them enjoy the food while I chomp away on a carrot stick!!
Ingredients
2 1/2 cups of small salted pretzels, finely crushed
1/4 cup of margarine, melted
1 Tbs sugar
6 cups of nonfat frozen vanilla yogurt, softened
3 Tbs frozen limeade concentrate, thawed(don't dilute w/ water)
1/4 cup of tequila
1 tsp grated lime rind
1 Tbs fresh lime juice
1. Combine first 3 ingredients in a small bowl, stirring well. The mixture should be moist, but not soupy. If mixture needs more moisture, add more melted margarine. Press mixture into bottom & up sides of a 9 inch pie plate. Put in freezer for 1 hour.
2. Combine yogurt & next 4 ingredients in a bowl, stirring well. Spoon into prepared crust. Cover & freeze.
3. Let pie stand at room temperature a few minutes before slicing. Garnish with lime slices & serve.
I was in California for a week & didn't have email access. I received some exciting news right before I left. My sister, Kim, found out that she's having a baby boy. If anyone knows of some good websites for baby stuff, please let me know.
I will post the recipe for the margarita pie within the next few days. I also want to send a big THANKS out to the people who have posted comments. Your enthusiasm is contagious!
